Sohan is a delightful Persian sweet treat that combines rich ghee, aromatic cardamom, and crunchy nuts, creating a melt-in-your-mouth experience. Perfect for festive occasions or a cozy afternoon tea.

Ingredients

  • 2 cups sugar
  • 1 cup water
  • 1 cup milk powder
  • 1/2 cup ghee
  • 1 teaspoon cardamom powder
  • 1/2 cup chopped pistachios
  • 1/2 cup chopped almonds
  • 1/4 teaspoon saffron strands

Method

  1. 1

In a saucepan, combine sugar and water. Heat over medium heat until sugar dissolves completely, forming a syrup.

  2. 2

Add ghee to the syrup and stir to combine. Allow the mixture to simmer for about 5 minutes.

  3. 3

Gradually add the milk powder while continuously stirring to avoid lumps. Keep stirring until the mixture thickens.

  4. 4

Add cardamom powder and saffron strands to the mixture, stirring well to incorporate them evenly.

  5. 5

Once thickened, remove from heat and pour the mixture into a greased tray or plate, spreading it evenly.

  6. 6

Allow the Sohan to cool at room temperature, then refrigerate for at least 30 minutes until set.

  7. 7

Once set, cut into squares or diamonds and garnish with chopped pistachios and almonds.

  8. 8

Serve chilled or at room temperature as a sweet treat.
