Savor the umami-rich flavors of this Japanese soba noodle dish, perfectly dressed with soy sauce and mirin. Ideal for a quick weeknight dinner or a refreshing lunch, it's simple yet satisfying.

Ingredients

  • 300 grams soba noodles
  • 4 cups water
  • 2 tablespoons soy sauce
  • 2 tablespoons mirin
  • 1 teaspoon sugar
  • 2 green onions sliced
  • 1 tablespoon wasabi

Method

  1. 1

Bring 4 cups of water to a rolling boil in a large pot.

  2. 2

Add the soba noodles to the boiling water and cook for about 5-7 minutes, or until tender but still firm.

  3. 3

Once cooked, drain the noodles in a colander and rinse them under cold water to stop the cooking process.

  4. 4

In a small bowl, combine soy sauce, mirin, and sugar to create the dipping sauce.

  5. 5

Serve the soba noodles chilled or at room temperature, garnished with sliced green onions and a side of wasabi.

  6. 6

Enjoy the soba noodles by dipping them into the sauce before each bite.
