- 1 cup red lentils
- 1 medium onion
- 2 cloves garlic
- 1 medium carrot
- 1 medium potato
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh lemon juice
Method

Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent.

Add minced garlic, diced carrot, and diced potato to the pot. Cook for about 5 minutes, stirring occasionally.

Stir in the red lentils and ground cumin, mixing well to coat the lentils with the spices.
