Indulge in the fragrant sweetness of Sholeh Zard, a traditional Persian saffron rice pudding infused with rose water and topped with crunchy almonds. Perfect for a cozy dessert or special gatherings.
IngredientsWhat you need
- 1 cup long-grain rice
- 3 cups water
- 1 cup sugar
- 1 teaspoon ground saffron
- 1 teaspoon rose water
- 1 tablespoon slivered almonds
- 1 tablespoon cinnamon
Method
- 1
Rinse the soaked rice under cold water until the water runs clear.
- 2
In a pot, combine the rinsed rice and water. Bring to a boil over medium heat.
- 3
Once boiling, reduce heat and let it simmer until the rice is fully cooked and water is absorbed, about 20-25 minutes.
- 4
Add the sugar, dissolved saffron, and rose water to the cooked rice, stirring gently to combine. Cook for an additional 10-15 minutes until the mixture thickens.
- 5
Remove from heat and let it cool slightly. Spoon the mixture into serving dishes.
- 6
Garnish with slivered almonds and a sprinkle of cinnamon if desired.
