Indulge in the rich flavors of Shola-e-Goshti, a traditional South Asian lamb and rice dish simmered with aromatic spices. Perfect for a cozy weeknight dinner or a special gathering with loved ones.
IngredientsWhat you need
- 500 grams lamb, diced
- 1 cup rice
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons ghee or oil
- 4 cups water
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon cumin powder
Method
- 1
Heat ghee or oil in a large pot over medium heat. Add the chopped onion and cook until translucent.
- 2
Stir in the minced garlic and grated ginger, cooking for another 2-3 minutes until fragrant.
- 3
Add the diced lamb to the pot. Sear the lamb until browned on all sides.
- 4
Pour in 4 cups of water, then season with salt, black pepper, and cumin powder. Bring to a boil, then reduce heat to low.
- 5
Cover and simmer for about 60 minutes, until the lamb is tender.
- 6
Once the lamb is ready, add the rice and stir gently. Cook for an additional 20-25 minutes, or until the rice is fully cooked and the water is absorbed.
- 7
Remove from heat and let it rest for a few minutes before serving.
- 8
Serve hot, garnished with fresh herbs if desired.
