Experience the vibrant flavors of Persian cuisine with Shirin Polo, a fragrant saffron-infused rice dish adorned with sweet dried fruits and nuts. Perfect for festive gatherings or a cozy family dinner.
IngredientsWhat you need
- 2 cups Basmati rice
- 1 cup sugar
- 1 cup mixed dried fruits (such as raisins, apricots, and almonds)
- 1 teaspoon saffron threads
- 1/2 cup butter
- 1 teaspoon cardamom powder
- 1/2 teaspoon salt
- 1 cup water
Method
- 1
Rinse the Basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- 2
In a large pot, bring 5-6 cups of water to a boil. Add the soaked rice and cook for about 8-10 minutes until slightly tender but still firm. Drain and set aside.
- 3
In a separate pot, melt the butter over medium heat. Add the soaked saffron with its water, sugar, cardamom powder, and salt. Stir until the sugar is dissolved.
- 4
Add the mixed dried fruits to the butter mixture and cook for an additional 5 minutes, stirring occasionally.
- 5
Layer half of the partially cooked rice in the pot, followed by the dried fruit mixture, and finish with the remaining rice on top. Cover the pot tightly with a lid and cook on low heat for 30 minutes until the rice is fully cooked.
- 6
Once cooked, gently fluff the rice with a fork, mixing in the fruits evenly.
- 7
Serve warm, garnished with additional almonds or nuts if desired.

I loved how the sweetness of the dried fruits complemented the fluffy basmati rice perfectly.
