Ingredients

  • 200 g digestive biscuits
  • 100 g butter
  • 600 g cottage cheese
  • 150 g sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch

Method

  1. 1

Preheat your oven to 180°C (350°F).

  2. 2

Crush the digestive biscuits into fine crumbs and mix with melted butter until well combined.

  3. 3

Press the biscuit mixture into the base of a springform pan to form a crust. Bake for about 10 minutes and set aside to cool.

  4. 4

In a large bowl, mix the cottage cheese, sugar, eggs, vanilla extract, lemon juice, and cornstarch until smooth and well blended.

  5. 5

Pour the cheese mixture over the cooled crust and smooth the top with a spatula.

  6. 6

Bake in the preheated oven for 50-60 minutes until set and slightly golden on top.

  7. 7

Turn off the oven and let the sernik cool inside with the door slightly open for about 1 hour.

  8. 8

Refrigerate for at least 4 hours or overnight before serving. Enjoy your homemade sernik!
