Indulge in the delightful Swedish Semla, a soft cardamom bun filled with sweet almond paste and topped with fluffy whipped cream. Perfect for a cozy afternoon treat or a festive celebration!

- 500 g all-purpose flour
- 75 g butter
- 50 g sugar
- 250 ml milk
- 25 g yeast
- 1 tsp salt
- 1 tsp ground cardamom
- 300 g whipped cream
- 100 g almond paste

In a small bowl, dissolve the yeast in warm milk and let it sit for about 5 minutes until frothy.

In a large mixing bowl, combine flour, sugar, salt, and ground cardamom. Make a well in the center.

Add the melted butter and yeast mixture into the well. Mix until a dough forms.

Knead the dough on a floured surface for about 10 minutes until smooth. Place the dough in a greased bowl and cover with a cloth. Let it rise for about 1 hour or until doubled in size.

Preheat your oven to 225°C (437°F). Once the dough has risen, divide it into 8 equal pieces and shape them into balls. Place them on a baking sheet lined with parchment paper.

Let the dough balls rest for another 20 minutes to rise slightly. Bake in the preheated oven for 10-15 minutes until golden brown. Remove from the oven and let them cool completely.

Once cooled, cut off the tops of the buns and scoop out a little of the inside. Mix the scooped dough with almond paste and fill the buns with this mixture and whipped cream.

Place the tops back on the filled buns, dust with powdered sugar, and serve.
