Selyodka Pod Shuboy is a vibrant Russian layered salad that beautifully combines pickled herring, earthy beets, and creamy mayonnaise. Perfect for festive gatherings or a cozy weeknight dinner, this dish is a feast for the eyes and the palate.

- 300 grams pickled herring fillets
- 2 medium potatoes
- 2 medium carrots
- 1 cup beetroot
- 1 cup mayonnaise
- 1 medium onion

Method

Start by boiling the potatoes, carrots, and beetroot until tender. Allow them to cool before grating.

Finely chop the pickled herring fillets and the onion.

In a deep dish or a serving platter, layer the ingredients starting with half of the grated potatoes. Press down gently to form an even layer.

Add a layer of half of the chopped herring and onions, followed by a layer of half of the grated carrots. Spread a thin layer of mayonnaise over it.

Repeat the layers with the remaining ingredients: potatoes, herring and onions, carrots, and finish with the grated beetroot on top.

Spread a generous layer of mayonnaise on top of the beetroot, and optionally decorate with herbs or additional herring.

Cover the dish with plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld together before serving.
