- 1 tablespoon butter
- 1 medium onion, chopped
- 2 stalks celery, chopped
- 2 medium potatoes, diced
- 4 cups fish stock
- 1 cup mixed seafood (shrimp, mussels, and fish)
- 1 cup heavy cream
- to taste pinch salt and pepper
- 2 tablespoons fresh parsley, chopped

In a large pot, melt the butter over medium heat.

Add the chopped onion and celery, and sauté until softened, about 5 minutes.

Stir in the diced potatoes and cook for another 5 minutes.

Pour in the fish stock, bring to a boil, and then reduce to a simmer for 15 minutes, until the potatoes are tender.

Add the mixed seafood and cook for another 5 minutes until the seafood is cooked through.

Stir in the heavy cream and season with salt and pepper to taste. Heat through but do not boil.
