- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 tablespoon caraway seeds
- 2 cups vegetable broth
- 2 medium onions
- 2 cloves garlic
- 1 tablespoon olive oil

Preheat your oven to 180°C (350°F).

Pat the pork knuckle dry and season generously with salt, black pepper, and caraway seeds, rubbing the spices into the skin.

In a large oven-safe pot, heat the olive oil over medium-high heat. Sear the pork knuckle on all sides until golden brown, about 4-5 minutes per side.

Add the quartered onions and smashed garlic to the pot, then pour in the vegetable broth. Bring to a simmer.

Cover the pot and transfer it to the preheated oven. Roast for about 90 minutes.

After 90 minutes, remove the lid and increase the oven temperature to 220°C (425°F). Roast for an additional 30 minutes to crisp up the skin.

Once the skin is crispy and golden, remove the pork knuckle from the oven. Let it rest for 10 minutes before slicing.
