Indulge in this hearty German Schweinsbraten, featuring tender pork shoulder seasoned with garlic and caraway, slow-roasted to perfection. Ideal for a cozy family dinner or festive gatherings, it’s a dish that warms the soul.
IngredientsWhat you need
- 2 kg pork shoulder
- 2 tablespoons sea salt
- 1 teaspoon black pepper
- 4 cloves garlic
- 1 cup vegetable broth
- 2 tablespoons caraway seeds
- 1 large onion
- 2 tablespoons oil
Method
- 1
Preheat your oven to 180°C (350°F).
- 2
Score the skin of the pork shoulder in a crisscross pattern and rub the sea salt, black pepper, and minced garlic all over the pork.
- 3
Heat the oil in a large, oven-proof pot over medium-high heat, and sear the pork shoulder on all sides until browned.
- 4
Remove the pork from the pot. Add the sliced onion and caraway seeds, sautéing until the onion is translucent.
- 5
Place the pork back in the pot and pour in the vegetable broth. Cover the pot with a lid or foil.
- 6
Roast in the preheated oven for about 2 hours or until the internal temperature reaches 70°C (160°F).
- 7
Once cooked, remove the pork from the oven and let it rest for 15 minutes before slicing.
- 8
Serve with dumplings and sauerkraut, if desired.
