Savor the vibrant flavors of Southeast Asia with this easy chicken satay, marinated in a zesty blend of soy, peanut, and lime. Perfect for a weeknight dinner or a lively gathering with friends!

- 500 grams chicken breast
- 2 tablespoons soy sauce
- 2 tablespoons peanut butter
- 1 tablespoon brown sugar
- 1 tablespoon lime juice
- 1 clove garlic
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 8 skewers bamboo skewers

In a mixing bowl, combine the chicken pieces, soy sauce, minced garlic, ground coriander, and salt. Mix well to coat the chicken evenly. Let it marinate for at least 15 minutes.

While the chicken is marinating, prepare the peanut sauce. In a small bowl, whisk together the peanut butter, brown sugar, lime juice, and a splash of water until smooth. Adjust the consistency with more water if needed.

Preheat the grill or a grill pan over medium-high heat. Thread the marinated chicken pieces onto the soaked bamboo skewers, leaving a little space between each piece.

Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

Once cooked, remove the skewers from the grill and let them rest for a few minutes. Serve the satay hot with the peanut sauce on the side for dipping.
