Sancocho Trifásico is a hearty Latin American stew brimming with tender beef, chicken, and pork, complemented by potatoes and plantains. Perfect for cozy family gatherings or festive occasions, this dish warms the soul.

Ingredients

  • 500 grams beef chuck
  • 500 grams chicken thighs
  • 500 grams pork ribs
  • 2 liters water
  • 3 medium potatoes
  • 2 medium ears of corn
  • 2 medium green plantains
  • 1 cup cilantro
  • 1 tablespoon salt
  • 1 tablespoon black pepper

Method

  1. 1

In a large pot, combine the beef, chicken, and pork with water. Bring to a boil over medium heat.

  2. 2

Once boiling, reduce heat to low, skim off any foam, and add salt and black pepper. Simmer for 30 minutes.

  3. 3

Add the cubed potatoes, corn, and green plantains to the pot. Stir gently and continue to simmer for another 30 minutes.

  4. 4

Check the tenderness of the meat; it should be fork-tender. If necessary, cook for additional time.

  5. 5

Taste the broth and adjust seasoning if needed.

  6. 6

Once cooked, remove from heat and let it rest for a few minutes. Discard any bones if present.

  7. 7

Serve hot in bowls, garnished with chopped cilantro.
