Savor the heartwarming flavors of Sancocho de Gallina, a traditional Colombian chicken stew brimming with tender hen, vibrant vegetables, and fragrant spices. Perfect for family gatherings or cozy weeknight dinners.
IngredientsWhat you need
- 1 whole hen (gallina)
- 2 liters water
- 2 medium potatoes
- 1 cup yuca
- 1 cup corn (maíz)
- 1 medium plantain
- 1 tablespoon cumin
- 1 bunch cilantro
- 1 medium onion
- 2 cloves garlic
Method
- 1
In a large pot, bring the water to a boil and add the whole hen. Reduce to a simmer.
- 2
Skim off any foam that forms on the surface of the broth for a clearer soup.
- 3
Add the chopped onion, minced garlic, cumin, and salt to the pot. Cook for about 30 minutes.
- 4
Add the potatoes, yuca, corn, and plantain to the pot. Continue to simmer for another 30 minutes or until the vegetables are tender.
- 5
Remove the hen from the pot and let it cool. Shred the meat, discarding the bones and skin.
- 6
Return the shredded hen to the pot and mix well. Adjust seasoning if necessary.
- 7
Serve hot, garnished with chopped cilantro.
