Sancocho is a hearty, flavorful stew that brings together tender beef, vibrant corn, and sweet plantains, creating a comforting dish perfect for family gatherings or cozy weeknight dinners.

- 500 grams beef (chuck or brisket)
- 1 large onion
- 2 cloves garlic
- 3 cups water
- 2 medium potatoes
- 2 ears corn
- 1 cup plantains
- 1 teaspoon cumin

In a large pot, bring the water to a boil and add the chunks of beef. Cook for about 30 minutes, skimming off any foam that rises to the surface.

Add the chopped onion, minced garlic, cumin, salt, and black pepper to the pot. Stir well and let it simmer for another 20 minutes.

Add the cubed potatoes, corn pieces, and sliced plantains to the pot. Stir to combine and let it cook for an additional 30 minutes, or until the vegetables are tender.

Check the seasoning and adjust salt and pepper as needed. If the broth is too thick, you can add a little more water.
