Experience the heartwarming flavors of Korean cuisine with this nourishing Samgyetang, a ginseng chicken soup brimming with tender chicken, fragrant garlic, and glutinous rice. Ideal for a cozy weeknight dinner or a rejuvenating meal any time of year.

Ingredients

  • 1 whole young chicken (about 1 kg)
  • 2 cups glutinous rice
  • 6 cloves garlic
  • 1 piece ginger
  • 4 cups water
  • 1 tbsp salt
  • 1 tbsp sesame oil
  • 2 pieces green onions

Method

    Rinse the glutinous rice under cold water until the water runs clear. Soak it in water for at least 1 hour, then drain.

    Stuff the young chicken with the soaked glutinous rice, garlic cloves, and sliced ginger.

    In a large pot, place the stuffed chicken and add 4 cups of water. Bring to a boil over high heat.

    Once boiling, reduce the heat to low, cover, and simmer for about 1.5 hours, or until the chicken is tender.

    Add salt to taste during the cooking process. Stir occasionally and skim off any foam that forms on the top.

    Once cooked, carefully remove the chicken from the pot and let it rest for a few minutes. Drizzle with sesame oil before serving.
