Sambusa, a delightful East African pastry, is filled with spiced minced beef and onions, encased in a crispy shell. Perfect for a cozy weeknight dinner or as an appetizer for gatherings, these hand-held treats are sure to impress.

- 2 cups all-purpose flour
- 1 teaspoon salt
- 1/4 cup water
- 1 cup minced beef
- 1 medium onion
- 1 teaspoon garlic
- 1 teaspoon cumin
- 1 teaspoon black pepper
- oil as needed for frying
Method

In a large bowl, combine the all-purpose flour and salt. Gradually add water and mix until a dough forms. Knead the dough for about 5 minutes until smooth. Cover and let it rest for 20 minutes.

In a skillet over medium heat, add a little oil, then sauté the chopped onion and minced garlic until translucent.

Add the minced beef to the skillet, along with cumin and black pepper. Cook until the meat is browned and fully cooked. Remove from heat and let it cool slightly.

Divide the rested dough into small balls. Roll each ball into a thin circle on a lightly floured surface.

Place a spoonful of the beef filling in the center of each circle. Fold the dough over to form a half-moon shape and seal the edges by pressing with a fork or your fingers.

Heat oil in a frying pan over medium heat. Fry the sambusas until golden brown and crispy on both sides. Remove and drain on paper towels.

Serve warm with your favorite dipping sauce or chutney.
