Sambousek are delightful Middle Eastern pastries filled with spiced ground beef or lamb and fresh herbs, perfect for sharing at gatherings or enjoying as a cozy weeknight dinner with loved ones.

- 2 cups all-purpose flour
- 1/2 cup water
- 1 teaspoon salt
- 2 tablespoons olive oil
- 300 grams ground beef or lamb
- 1 medium onion, finely chopped
- 1 teaspoon cumin powder
- 1 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped
Method

In a mixing bowl, combine the flour and salt. Add the olive oil and mix well.

Gradually add the water while kneading the dough until it is smooth and elastic. Cover with a damp cloth and let it rest for 15 minutes.

In a skillet, heat a little olive oil over medium heat. Add the chopped onion and sauté until translucent.

Add the ground beef or lamb, cumin powder, and black pepper. Cook until the meat is browned and fully cooked. Remove from heat and let the mixture cool slightly.

Roll out the dough on a floured surface to about 1/8 inch thick. Cut into circles using a cup or a cookie cutter.

Place a spoonful of the meat mixture in the center of each circle. Fold the dough over to form a half-moon shape and seal the edges by pressing with a fork.

Heat oil in a deep frying pan over medium heat. Fry the sambousek until golden brown and crispy on both sides.

Remove from oil and drain on paper towels. Serve hot, garnished with fresh parsley.
