Savor the vibrant flavors of Southeast Asia with Sambal Stingray, where tender stingray fillet meets spicy Sambal Oelek and zesty lime, all wrapped in fragrant banana leaves. Perfect for a weeknight dinner that transports you to the coast.

Ingredients

  • 500 grams stingray fillet
  • 4 tablespoons Sambal Oelek
  • 1 tablespoon lime juice
  • 2 leaves banana leaves
  • 1 teaspoon salt

Method

    Preheat your grill or BBQ to medium-high heat.

    If using banana leaves, rinse them under water, then briefly pass them over an open flame to make them more pliable.

    In a bowl, mix the Sambal Oelek, lime juice, and salt together to create a marinade.

    Coat the stingray fillet evenly with the sambal marinade.

    Place the marinated stingray onto the banana leaves, folding them over to create a package. If not using banana leaves, place the fillet directly on the grill.

    Grill the stingray for about 10-15 minutes on each side, or until the fish is cooked through and flakes easily with a fork.

    Remove from the grill and carefully unwrap the banana leaves if used.

    Serve hot with additional lime wedges on the side.
