- 8 slices prosciutto
- 8 leaves fresh sage
- 1 cup dry white wine

Lay out the veal cutlets on a clean surface and season both sides with salt and pepper.

Place a slice of prosciutto on each cutlet, followed by a sage leaf on top of the prosciutto. Secure with a toothpick or kitchen twine.

In a large skillet, heat the olive oil over medium-high heat. Once hot, add the prepared cutlets and cook for about 3-4 minutes on each side, until browned.

Remove the cutlets from the pan and set aside. Lower the heat and add the butter to the skillet, allowing it to melt and brown slightly.
