Indulge in the rich flavors of Italian cuisine with this classic Saltimbocca, featuring tender veal cutlets wrapped in savory prosciutto and aromatic sage. Perfect for a special occasion or a romantic weeknight dinner.

Ingredients

  • 4 slices veal cutlets
  • 8 slices prosciutto
  • 8 leaves fresh sage
  • 1 cup dry white wine
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • to taste salt and pepper

Method

    Lay out the veal cutlets on a clean surface and season both sides with salt and pepper.

    Place a slice of prosciutto on each cutlet, followed by a sage leaf on top of the prosciutto. Secure with a toothpick or kitchen twine.

    In a large skillet, heat the olive oil over medium-high heat. Once hot, add the prepared cutlets and cook for about 3-4 minutes on each side, until browned.

    Remove the cutlets from the pan and set aside. Lower the heat and add the butter to the skillet, allowing it to melt and brown slightly.

    Pour in the dry white wine to deglaze the pan, scraping up any browned bits. Let it simmer for about 2 minutes.

    Return the cutlets to the skillet and cook for an additional 2-3 minutes, allowing them to absorb the flavors of the sauce.
