Ingredients

  • 500 grams lamb or chicken pieces
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 teaspoons ginger, grated
  • 2 teaspoons cumin powder
  • 2 teaspoons coriander powder
  • 1 can chopped tomatoes
  • 1 cup vegetable or chicken broth
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup potatoes, cubed
  • 1 cup carrots, sliced

Method

  1. 1

Heat the vegetable oil in a large pot over medium heat.

  2. 2

Add the chopped onion and sauté until translucent, about 5 minutes.

  3. 3

Stir in the minced garlic and grated ginger, cooking for an additional 2 minutes until fragrant.

  4. 4

Add the lamb or chicken pieces, browning them on all sides for about 10 minutes.

  5. 5

Incorporate the cumin and coriander powders, mixing well to coat the meat.

  6. 6

Pour in the chopped tomatoes and broth, then add the salt and black pepper. Bring to a boil.

  7. 7

Reduce the heat and let it simmer for 30 minutes, adding the cubed potatoes and sliced carrots halfway through.

  8. 8

Once the meat is tender and the vegetables are cooked, taste and adjust seasoning if necessary. Serve hot.
