Experience the vibrant flavors of Persian cuisine with Sabzi Polo, a fragrant herb rice dish bursting with fresh dill, cilantro, and parsley. Ideal for a festive gathering or a cozy family dinner, it's a delightful way to celebrate springtime herbs.
IngredientsWhat you need
- 2 cups basmati rice
- 1 cup fresh dill
- 1 cup fresh cilantro
- 1 cup fresh parsley
- 1 cup green onions
- 4 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
Method
- 1
Rinse the soaked basmati rice under cold water until the water runs clear to remove excess starch.
- 2
In a large pot, bring water to a boil and add a teaspoon of salt. Add the rinsed rice and cook until it is about halfway done, approximately 5-7 minutes.
- 3
In a separate large bowl, combine the chopped dill, cilantro, parsley, and green onions. Set aside.
- 4
Once the rice is halfway cooked, drain it and layer it over the herb mixture in the bowl. Drizzle the olive oil on top.
- 5
Cover the bowl with a lid and place it over low heat to steam for about 30 minutes, allowing the flavors to meld.
- 6
After steaming, gently fluff the rice and herbs with a fork to combine. Season with black pepper and additional salt if needed.
- 7
Serve warm as a side dish or main course, often accompanied by fish or kebabs.
