- 2 cups basmati rice
- 4 cups water
- 1 cup mixed greens (spinach, dill, cilantro, parsley)
- 3 tablespoons olive oil
- 1 medium onion
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon ground turmeric
Method

Rinse the basmati rice under cold water until the water runs clear. This helps to remove excess starch.

In a large pot, bring 4 cups of water to a boil. Add the rinsed rice and 1 teaspoon of salt.

Once the water returns to a boil, reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes, or until the rice is cooked and the water is absorbed.

In a separate pan, heat the olive oil over medium heat. Add the chopped onion and sauté until golden brown.

Add the mixed greens, black pepper, and turmeric to the onions. Cook for about 5-7 minutes until the greens are wilted and tender.
