Savor the vibrant flavors of Persian cuisine with Sabzi Chalow, a fragrant basmati rice dish adorned with fresh herbs and spices. Ideal for a cozy weeknight dinner or a festive gathering, it’s a celebration of wholesome ingredients.

Ingredients

  • 2 cups basmati rice
  • 4 cups water
  • 1 cup mixed greens (spinach, dill, cilantro, parsley)
  • 3 tablespoons olive oil
  • 1 medium onion
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon ground turmeric

Method

  1. 1

Rinse the basmati rice under cold water until the water runs clear. This helps to remove excess starch.

  2. 2

In a large pot, bring 4 cups of water to a boil. Add the rinsed rice and 1 teaspoon of salt.

  3. 3

Once the water returns to a boil, reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes, or until the rice is cooked and the water is absorbed.

  4. 4

In a separate pan, heat the olive oil over medium heat. Add the chopped onion and sauté until golden brown.

  5. 5

Add the mixed greens, black pepper, and turmeric to the onions. Cook for about 5-7 minutes until the greens are wilted and tender.

  6. 6

Once the rice is cooked, fluff it with a fork and gently mix in the sautéed greens.

  7. 7

Serve warm as a side dish or main dish, garnished with additional fresh herbs if desired.
