Ingredients

  • 2 cups glutinous rice
  • 1 cup water
  • 1 cup rice wine starter
  • 1 tablespoon sugar
  • 1 pinch salt
  • 1 teaspoon fresh ginger

Method

    Rinse the glutinous rice thoroughly under cold water until the water runs clear. Soak in water for at least 4 hours, preferably overnight.

    Drain the soaked rice and place it in a steamer basket lined with cheesecloth. Steam over boiling water for about 30 minutes or until the rice is cooked and slightly sticky.

    Sprinkle the rice wine starter, sugar, and salt over the warm rice and mix well. Ensure that the starter is evenly distributed throughout the rice.
