Indulge in the creamy sweetness of Roz Bel Laban, a delightful Middle Eastern rice pudding infused with vanilla and topped with crunchy nuts and coconut flakes. Perfect for a comforting dessert or a special occasion treat.

- 1 cup rice
- 4 cups milk
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/4 cup cornstarch
- 1/4 cup water
- 1/4 cup chopped nuts
- 1/4 cup coconut flakes

Rinse the rice under cold water until the water runs clear to remove excess starch.

In a saucepan, combine the rinsed rice and 3 cups of milk. Bring to a boil over medium heat, stirring occasionally.

Once boiling, reduce the heat to low and simmer, covered, for about 15-20 minutes until the rice is tender.

In a separate bowl, dissolve the cornstarch in 1/4 cup of water. Add the mixture to the saucepan along with the remaining 1 cup of milk, sugar, and vanilla extract.

Cook the mixture over low heat, stirring constantly, until it thickens to a pudding-like consistency, about 5-10 minutes.

Remove from heat and pour the mixture into serving bowls. Allow it to cool to room temperature, then refrigerate for at least 2 hours until set.
