- 1.5 kg lamb (shoulder or leg, cut into pieces)
- 2 tablespoons ghee (clarified butter)
- 2 medium onions (finely sliced)
- 4 cloves garlic (minced)
- 1 inch ginger (grated)
- 1 tablespoon garam masala
- 1 tablespoon Kashmiri red chili powder
- 400 ml plain yogurt
- 2 cups water
- 1 teaspoon salt

Heat ghee in a large pot over medium heat. Add finely sliced onions and sauté until golden brown.

Stir in minced garlic and grated ginger, cooking for another 2 minutes until fragrant.

Add the lamb pieces to the pot, searing them on all sides until browned.

In a small bowl, mix the Kashmiri red chili powder and garam masala with yogurt to form a smooth paste. Add this mixture to the pot.

Pour in water, add salt, and stir well. Bring to a boil, then reduce heat to low. Cover and simmer for about 1.5 hours, until the lamb is tender.

Check occasionally and add more water if needed to prevent sticking.

Once the lamb is cooked through, adjust the seasoning if necessary and let it rest for a few minutes before serving.
