Indulge in the warm, sweet flavors of Rgag, a delightful Middle Eastern treat made with date paste and fragrant cardamom. Perfect for a cozy afternoon snack or a special dessert to share with loved ones.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup water
  • 1 teaspoon salt
  • 2 tablespoons ghee or oil
  • 1 cup date paste
  • 1 teaspoon ground cardamom

Method

  1. 1

In a mixing bowl, combine the all-purpose flour and salt. Gradually add water and knead until a soft dough forms.

  2. 2

Cover the dough with a damp cloth and let it rest for about 5 minutes.

  3. 3

Divide the dough into equal portions and roll each portion into thin circles using a rolling pin.

  4. 4

Heat ghee or oil in a frying pan over medium heat. Place each rolled dough in the pan and cook until lightly golden on both sides.

  5. 5

Spread a layer of date paste on one side of the cooked dough, then fold it in half and press gently to seal.

  6. 6

Return the filled rgag to the pan and cook for an additional minute on both sides until warmed through.

  7. 7

Serve warm, optionally sprinkled with ground cardamom for extra flavor.

Making Rgag for the first time was a surprisingly straightforward experience. I felt a bit nervous about the texture, but it turned out perfectly chewy and flavorful.
