Indulge in the sweet, syrup-soaked delight of Revani, a traditional Turkish semolina cake infused with yogurt and a hint of lemon. Perfect for a cozy afternoon tea or a festive gathering with friends and family.
IngredientsWhat you need
- 1 cup semolina
- 1 cup granulated sugar
- 1 cup yogurt
- 3 large eggs
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1 cup water
- 1 cup sugar (for syrup)
- 1 cup water (for syrup)
- 1 teaspoon lemon juice
Method
- 1
Preheat your oven to 180°C (350°F).
- 2
In a large mixing bowl, beat the eggs and sugar together until the mixture is light and fluffy.
- 3
Add yogurt and mix well, then gradually add semolina, flour, and baking powder while continuing to stir until smooth.
- 4
Pour the batter into a greased baking dish and spread evenly.
- 5
Bake in the preheated oven for about 30 minutes or until golden brown.
- 6
While the cake is baking, prepare the syrup by boiling water and sugar together until the sugar has completely dissolved. Add lemon juice if using. Let the syrup cool.
- 7
Once the Revani is baked, remove from the oven and immediately pour the syrup over it while it's still hot.
- 8
Allow it to absorb the syrup for at least 1 hour before slicing and serving.
