Indulge in the sweet, spongy delight of Rasgulla, a beloved Indian dessert made from fresh cheese soaked in fragrant sugar syrup. Perfect for festive occasions or a special treat after dinner.

- 1 liter whole milk
- 1 tablespoon lemon juice
- 1 cup sugar
- 4 cups water
- 1 teaspoon cardamom powder
- 1 teaspoon rose water
Method

Boil the milk in a heavy-bottomed pan. Stir continuously to prevent it from burning.

Once the milk comes to a boil, add the lemon juice and continue to stir until the milk curdles.

Remove from heat and strain the curds using a muslin cloth or fine sieve. Rinse under cold water to remove the lemon flavor.

Squeeze out excess water from the curds and let it sit for about 10 minutes to dry.

Knead the curds into a smooth dough for about 5-7 minutes. Form small balls (about 1 inch in diameter).

In a separate pot, combine sugar and water to make the syrup. Bring to a boil and add cardamom powder and rose water.

Once the syrup is boiling, gently add the rasgulla balls. Cook them for about 15-20 minutes until they double in size.

Remove from heat and let the rasgullas soak in syrup for at least 30 minutes before serving.
