Experience the sweet and aromatic flavors of Ranginak, a Persian dessert made with luscious dates, crunchy walnuts, and fragrant cardamom. Perfect for a festive gathering or a cozy afternoon treat with tea.

Ingredients

  • 2 cups dates, pitted and chopped
  • 1 cup walnuts, finely chopped
  • 1 cup semolina
  • 1/2 cup butter
  • 1/2 cup powdered sugar
  • 1 teaspoon cardamom powder
  • 1/4 cup rose water
  • 1/4 cup sliced almonds

Method

  1. 1

In a large skillet, melt the butter over medium heat.

  2. 2

Add the semolina to the melted butter and toast it for about 5-7 minutes or until it’s golden and fragrant, stirring continuously.

  3. 3

Remove the skillet from heat, then stir in the chopped dates, walnuts, cardamom powder, and rose water until well combined.

  4. 4

Press the mixture into a greased 9x9 inch square dish or onto a baking sheet lined with parchment paper, spreading evenly.

  5. 5

Let the mixture cool for about 10 minutes, then cut into squares or diamonds while still warm.

  6. 6

Dust the top with powdered sugar and sprinkle sliced almonds for garnish.

  7. 7

Allow to cool completely before serving. Store in an airtight container for up to a week.
