Indulge in Rahat, a delightful Middle Eastern confection made with sugar, cornstarch, and a hint of rose water, creating a sweet, chewy treat perfect for special occasions or a cozy afternoon snack with tea.

- 1 kg sugar
- 500 ml water
- 200 g cornstarch
- 500 ml water
- 1 tbsp lemon juice
- 1 tsp rose water
- 100 g powdered sugar
- 50 g walnuts
Method

In a saucepan, combine the sugar and 500 ml of water. Stir over medium heat until the sugar has completely dissolved.

Bring the mixture to a boil and let it simmer for about 10 minutes without stirring. This forms a syrup.

In another bowl, mix the cornstarch with 500 ml of water until smooth. Gradually add this mixture to the boiling syrup while stirring continuously to avoid lumps.

Continue to cook the mixture over low heat, stirring constantly, until it thickens and pulls away from the sides of the pan (about 20-30 minutes).

Stir in the lemon juice and rose water. If using, fold in the chopped walnuts at this stage.

Pour the mixture into a greased rectangular dish and let it cool completely at room temperature (about 2-3 hours).

Once cooled, dust the top with powdered sugar and cut into square or diamond-shaped pieces.

Store the rahat in an airtight container, separated by layers of powdered sugar to prevent sticking.
