Savor the comforting flavors of Raggmunk, a traditional Swedish potato pancake, perfectly crisped and served with creamy sour cream and sweet lingonberry jam. Ideal for a cozy weeknight dinner or a delightful brunch treat.

Ingredients

  • 2 cups potatoes, grated
  • 1 cup all-purpose flour
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon salt
  • 3 tablespoons butter
  • 1/2 cup sour cream
  • 1/4 cup lingonberry jam

Method

    Peel and grate the potatoes using a box grater or food processor.

    In a large mixing bowl, combine grated potatoes, flour, milk, eggs, and salt. Stir until well mixed.

    Heat a large skillet over medium heat and add 1 tablespoon of butter.

    Once the butter is melted and bubbling, pour in about 1/4 cup of the potato batter for each pancake. Flatten slightly with a spatula.
