IngredientsWhat you need
- 2 cups potatoes, grated
- 1 cup all-purpose flour
- 1 cup milk
- 2 large eggs
- 1 teaspoon salt
- 3 tablespoons butter
- 1/2 cup sour cream
- 1/4 cup lingonberry jam
Method
- 1
Peel and grate the potatoes using a box grater or food processor.
- 2
In a large mixing bowl, combine grated potatoes, flour, milk, eggs, and salt. Stir until well mixed.
- 3
Heat a large skillet over medium heat and add 1 tablespoon of butter.
- 4
Once the butter is melted and bubbling, pour in about 1/4 cup of the potato batter for each pancake. Flatten slightly with a spatula.
- 5
Cook for about 4-5 minutes on each side, or until golden brown and crispy. Add more butter as needed for subsequent batches.
- 6
Remove the pancakes from the skillet and keep warm while you cook the remaining batter.
- 7
Serve hot with sour cream and lingonberry jam on the side.
