Ingredients

  • 1 cup all-purpose flour
  • 1 cup milk
  • 2 large eggs
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 pinch salt
  • oil for frying vegetable oil
  • optional as needed powdered sugar

Method

    In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.

    In another bowl, beat the eggs with the milk and vanilla extract until well combined.

    Gradually add the wet ingredients to the dry ingredients, stirring until just combined. The batter should be thick but pourable.

    Heat a couple of tablespoons of vegetable oil in a frying pan over medium heat.

    Pour spoonfuls of batter into the hot oil, cooking until golden brown on both sides, about 2-3 minutes per side.

    Remove the racuchy from the pan and drain on paper towels to remove excess oil.

    Serve warm, dusted with powdered sugar if desired.
