Indulge in the rich flavors of Quzi, a traditional Middle Eastern lamb and rice dish, infused with aromatic spices and topped with crunchy almonds and sweet raisins. Perfect for a festive gathering or a cozy family dinner.

- 1 kg lamb shoulder
- 2 cups basmati rice
- 1 large onion
- 4 cloves garlic
- 2 tbsp tomato paste
- 1 tbsp allspice
- 1 tsp cinnamon
- 4 cups water
- 1 cup slivered almonds
- 1 cup raisins
Method

In a large pot, heat some oil over medium heat and sauté the chopped onion until translucent.

Add the minced garlic and cook for an additional minute until fragrant.

Add the lamb shoulder chunks to the pot and brown on all sides.

Stir in the tomato paste, allspice, and cinnamon, cooking for a few minutes to combine the flavors.

Pour in the water, bring to a boil, then reduce to a simmer. Cover and cook for about 1.5 hours until the lamb is tender.

Remove the lamb from the pot and set aside. Add the soaked basmati rice to the remaining broth and cook according to package instructions until fluffy.

Meanwhile, shred the lamb into bite-sized pieces and stir it back into the cooked rice once done.

Serve the Quzi garnished with toasted slivered almonds and raisins.
