Indulge in the sweet, comforting flavors of Queijadas, a traditional Portuguese treat made with fresh cheese, cinnamon, and a hint of vanilla. Perfect for a cozy afternoon snack or a delightful dessert at your next gathering.

Ingredients

  • 1 cup sugar
  • 1 cup milk
  • 1 cup fresh cheese (or ricotta)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon

Method

  1. 1

Preheat the oven to 180°C (350°F) and grease a muffin tin or individual tart molds.

  2. 2

In a large mixing bowl, combine the sugar, milk, fresh cheese, and eggs. Mix until well combined.

  3. 3

Add the flour, baking powder, vanilla extract, and ground cinnamon to the mixture. Stir until smooth.

  4. 4

Pour the batter evenly into the prepared muffin tin or tart molds.

  5. 5

Bake in the preheated oven for about 25 minutes, or until the tops are golden and a toothpick inserted comes out clean.

  6. 6

Remove from the oven and let cool for a few minutes before carefully removing from the molds.

  7. 7

Serve warm or at room temperature, optionally sprinkled with additional cinnamon.
