Indulge in the delightful flavors of Qatayef, a Middle Eastern treat filled with creamy ricotta and crunchy nuts, perfect for festive gatherings or a sweet end to a cozy dinner. Fry them to golden perfection for a crispy bite!

Ingredients

  • 2 cups all-purpose flour
  • 1 cup water
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1 cup ground walnuts or pistachios
  • 1/2 cup sugar syrup
  • 1 cup ricotta cheese or cream cheese
  • oil for frying vegetable oil

Method

    In a mixing bowl, combine the flour, baking powder, sugar, and water. Whisk until you have a smooth batter.

    Heat a non-stick skillet over medium heat. Pour small circles of batter (about 3-4 inches in diameter) into the skillet, cooking until bubbles form on the surface (about 2-3 minutes).

    Remove the cooked pancakes from the skillet and place them on a plate. Cover them with a kitchen towel to keep warm.

    For each pancake, place a spoonful of the ricotta cheese and ground nuts mixture in the center. Fold the pancake in half and pinch the edges to seal tightly.
