Indulge in the delightful flavors of Qatayef, a Middle Eastern treat filled with creamy ricotta and crunchy nuts, perfect for festive gatherings or a sweet end to a cozy dinner. Fry them to golden perfection for a crispy bite!
IngredientsWhat you need
- 2 cups all-purpose flour
- 1 cup water
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1 cup ground walnuts or pistachios
- 1/2 cup sugar syrup
- 1 cup ricotta cheese or cream cheese
- oil for frying vegetable oil
Method
- 1
In a mixing bowl, combine the flour, baking powder, sugar, and water. Whisk until you have a smooth batter.
- 2
Heat a non-stick skillet over medium heat. Pour small circles of batter (about 3-4 inches in diameter) into the skillet, cooking until bubbles form on the surface (about 2-3 minutes).
- 3
Remove the cooked pancakes from the skillet and place them on a plate. Cover them with a kitchen towel to keep warm.
- 4
For each pancake, place a spoonful of the ricotta cheese and ground nuts mixture in the center. Fold the pancake in half and pinch the edges to seal tightly.
- 5
In a frying pan, heat the vegetable oil over medium heat. Fry the stuffed pancakes until golden brown on both sides, about 2-3 minutes per side.
- 6
Once fried, place the Qatayef on a paper towel to drain excess oil.
- 7
Drizzle the warm Qatayef with sugar syrup before serving.
- 8
Serve warm and enjoy your delicious Qatayef!
