Experience the rich flavors of Afghan cuisine with Qabili Palau, a fragrant dish of tender lamb or chicken, basmati rice, and sweet carrots, perfect for a cozy family dinner or a festive gathering.

- 2 cups basmati rice
- 680.4 g lamb or chicken, cut into pieces
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 cups carrots, julienned
- 1 cup raisins
- 1 tablespoon cumin seeds
- 4 cups water
- 1 teaspoon salt

In a large pot, heat some oil over medium heat and fry the chopped onion until golden brown.

Add the minced garlic and ginger to the onions and sauté for another minute until fragrant.

Stir in the pieces of lamb or chicken, and cook until they are browned on all sides.

Pour in the water, add the cumin seeds and salt, then bring to a boil. Reduce heat and simmer for about 45 minutes until the meat is tender.

While the meat is cooking, boil another pot of water and add the soaked basmati rice. Cook until al dente, then drain and set aside.

Once the meat is tender, layer the cooked rice over the meat in the pot. Top with the julienned carrots and raisins.

Cover the pot with a lid and let it steam on low heat for about 20-25 minutes, allowing the flavors to meld.
