Ingredients

  • 1 1/2 cups cooked pumpkin
  • 1/2 tsp mixed spice
  • 1 Tbsp white sugar
  • 1 egg
  • 1/2 cup flour
  • 3 tsp baking powder

Method

    Drain pumpkin well and mix with sugar and spice, beat in egg.

    Sift together flour and baking powder and stir into above.

    Drop spoonfuls of mixture into hot oil in frying pan and cook till puffed, slightly browning both sides.

    Drain off excess fat on paper towels.
