- 1 cup Basmati rice
- 2 tablespoons Ghee or vegetable oil
- 1 cup Mixed vegetables (carrots, peas, beans)
- 1 medium Onion
- 2 cloves Garlic
- 1 inch Ginger
- 2 cups Water
- 1 teaspoon Cumin seeds
- 2 cardamom pods Green cardamom
- 1 stick Cinnamon
- Salt to taste Salt
Method

Heat ghee or vegetable oil in a large pot over medium heat.

Add cumin seeds, green cardamom, and cinnamon stick. Sauté for about 30 seconds until fragrant.

Add sliced onions and cook until golden brown. Then, add minced garlic and grated ginger. Sauté for 2-3 minutes.

Add mixed vegetables to the pot and cook for another 5 minutes, stirring occasionally.

Add the soaked and drained Basmati rice, along with salt, and stir gently to mix everything together.

Pour in water and bring to a boil. Once boiling, reduce the heat to low, cover with a lid, and let it simmer for 15-20 minutes until rice is fully cooked.

Once cooked, remove from heat and let it sit covered for another 5 minutes. Fluff the rice with a fork before serving.

Serve hot, optionally garnished with fresh cilantro or fried onions.
