Indulge in the light and airy delight of Ptichye Moloko, a classic Eastern European dessert that combines fluffy egg whites with creamy milk and vanilla. Perfect for a special occasion or a sweet treat after dinner.
IngredientsWhat you need
- 1 cup granulated sugar
- 4 eggs large egg whites
- 1 cup milk
- 1 cup heavy cream
- 1 tablespoon gelatin
- 1 cup vanilla sugar
- 1 teaspoon vanilla extract
Method
- 1
Preheat the oven to 170°C (340°F). Line a baking sheet with parchment paper.
- 2
In a clean bowl, beat the egg whites until soft peaks form. Gradually add the granulated sugar, continuing to beat until stiff peaks are achieved.
- 3
Spread the meringue mixture onto the prepared baking sheet, creating a flat layer. Bake for 1 hour, then turn off the oven and let the meringue cool inside.
- 4
Dissolve the gelatin in cold water, then mix it with warm milk and vanilla extract until combined. Allow to cool slightly.
- 5
In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the milk mixture.
- 6
Once the meringue is cool, carefully break it into pieces and fold it into the cream mixture until just combined.
- 7
Pour the mixture into a mold or serving dish and refrigerate for at least 4 hours, or until set.
- 8
Once set, slice and serve chilled, optionally topped with fruit or chocolate sauce.
