Indulge in the enchanting flavors of Prinsesstårta, a classic Swedish layer cake filled with raspberry jam and whipped cream, all enveloped in a sweet green marzipan. Perfect for celebrations or a delightful afternoon treat.

Ingredients

  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1 cup whipping cream
  • 1 cup raspberry jam
  • 2 cups green marzipan
  • 1 cup powdered sugar

Method

    Preheat the oven to 175°C (350°F). Grease and line a round cake pan.

    In a mixing bowl, beat the eggs and granulated sugar together until pale and fluffy.

    Sift the flour and baking powder together, then gently fold it into the egg mixture until just combined.

    Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a skewer comes out clean. Allow to cool completely.

    Once cooled, slice the cake horizontally into three layers. Spread raspberry jam between each layer, then frost the outside with whipping cream.

    Roll out the green marzipan to a thickness of about 5mm (1/4 inch) and cover the cake completely, smoothing it out.

    Dust the top with powdered sugar and decorate as desired. Refrigerate until ready to serve.
