- 200 g chorizo sausage
- 1 cup fresh pasta (fideos)
- 1 medium onion
- 2 cloves garlic
- 1 tbsp olive oil
- 4 cups vegetable broth

Rinse and soak the dried white beans in water overnight. Drain before cooking.

In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.

Add the sliced chorizo and cook until browned, about 5 minutes.

Stir in the soaked beans and pour in the vegetable broth. Bring to a boil, then reduce heat and let simmer for 60 minutes or until the beans are tender.
