Experience the vibrant flavors of Colombian cuisine with Pollo Sudado, a comforting chicken stew simmered with aromatic spices, fresh tomatoes, and cilantro. Perfect for a cozy weeknight dinner that warms the soul.

Ingredients

  • 1 kg chicken pieces
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 large tomato, chopped
  • 1 cup chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bunch coriander, chopped

Method

  1. 1

Heat the vegetable oil in a large pot over medium heat.

  2. 2

Add the chopped onion and sauté until translucent, about 5 minutes.

  3. 3

Stir in the minced garlic and chopped tomato, cooking for another 3 minutes until the tomato softens.

  4. 4

Add the chicken pieces to the pot, browning them on all sides for about 10 minutes.

  5. 5

Pour in the chicken broth and add cumin, salt, and black pepper. Bring to a boil, then reduce heat to low.

  6. 6

Cover the pot and let it simmer for 30 minutes, or until the chicken is cooked through and tender.

  7. 7

Taste and adjust seasoning if necessary, then garnish with chopped coriander before serving.

  8. 8

Serve warm with rice and avocado on the side.
