- 500 grams whole fish (like tilapia or snapper)
- 1/2 cup all-purpose flour
- 2 cups vegetable oil
- 4 cloves garlic
- 3 tablespoons Thai chili paste (Nam Prik Pao)
- 2 tablespoons soy sauce
- 1 tablespoon palm sugar
- 1/2 cup water
- 1 cup fresh basil leaves

Rinse the whole fish under cold water and pat dry with paper towels. Lightly coat the fish with flour, shaking off any excess.

In a deep frying pan or wok, heat the vegetable oil over medium-high heat. Once hot, carefully add the coated fish and fry until golden brown and cooked through, about 6-8 minutes per side. Remove and drain on paper towels.

In a separate pan, heat a tablespoon of oil and sauté the minced garlic until fragrant.

Add the Thai chili paste, soy sauce, palm sugar, and water to the pan with the garlic. Stir well to combine and cook for a few minutes until the sauce thickens slightly.
