Dive into the vibrant flavors of Thai cuisine with Pla Rad Prik, a crispy fried fish drizzled in a spicy garlic-chili sauce. Perfect for a weeknight dinner that brings excitement to your table!

Ingredients

  • 500 grams whole fish (like tilapia or snapper)
  • 1/2 cup all-purpose flour
  • 2 cups vegetable oil
  • 4 cloves garlic
  • 3 tablespoons Thai chili paste (Nam Prik Pao)
  • 2 tablespoons soy sauce
  • 1 tablespoon palm sugar
  • 1/2 cup water
  • 1 cup fresh basil leaves

Method

  1. 1

Rinse the whole fish under cold water and pat dry with paper towels. Lightly coat the fish with flour, shaking off any excess.

  2. 2

In a deep frying pan or wok, heat the vegetable oil over medium-high heat. Once hot, carefully add the coated fish and fry until golden brown and cooked through, about 6-8 minutes per side. Remove and drain on paper towels.

  3. 3

In a separate pan, heat a tablespoon of oil and sauté the minced garlic until fragrant.

  4. 4

Add the Thai chili paste, soy sauce, palm sugar, and water to the pan with the garlic. Stir well to combine and cook for a few minutes until the sauce thickens slightly.

  5. 5

Pour the sauce over the fried fish evenly, ensuring it's well coated.

  6. 6

Garnish with fresh basil leaves before serving.
