Experience the warmth of traditional Bengali cuisine with Pitha, a delightful rice flour dumpling filled with sweet coconut and jaggery. Perfect for a cozy afternoon snack or festive gatherings, this treat will transport you to the heart of India.

Ingredients

  • 2 cups rice flour
  • 1 cup water
  • 1 teaspoon salt
  • 1 cup grated coconut
  • 1/2 cup jaggery
  • 1 tablespoon mustard oil

Method

    In a bowl, mix the rice flour and salt. Gradually add water and knead into a soft dough.

    In another bowl, mix the grated coconut and jaggery until well combined.

    Divide the dough into small balls, then flatten each ball into a small disc.

    Place a spoonful of the coconut and jaggery mixture in the center of each disc and fold the edges over to seal.

    Heat a pan and lightly grease it with mustard oil. Cook the pithas on medium heat for about 3-4 minutes on each side until golden.
