- 2 cups rice flour
- 1 cup water
- 1 teaspoon salt
- 1 cup grated coconut
- 1/2 cup jaggery
- 1 tablespoon mustard oil
Method

In a bowl, mix the rice flour and salt. Gradually add water and knead into a soft dough.

In another bowl, mix the grated coconut and jaggery until well combined.

Divide the dough into small balls, then flatten each ball into a small disc.

Place a spoonful of the coconut and jaggery mixture in the center of each disc and fold the edges over to seal.

Heat a pan and lightly grease it with mustard oil. Cook the pithas on medium heat for about 3-4 minutes on each side until golden.
