  • 56.7 g Pisco
  • 28.4 g fresh lime juice
  • 28.4 g simple syrup
  • 1 dash bitters
  • 1 each egg white
  • ice as needed ice cubes

Method

    In a cocktail shaker, combine pisco, fresh lime juice, simple syrup, and egg white.

    Dry shake (without ice) for about 15 seconds to emulsify the egg white.

    Add ice cubes to the shaker and shake vigorously for another 10-15 seconds.

    Strain the mixture into a chilled cocktail glass.

    Add a dash of bitters on top for garnish.
