- 2 cups rice
- 4 cups water
- 1 cup groundnut (peanut) butter
- 1 cup coconut milk
- 1 teaspoon salt
- 1 cup chopped vegetables
- 2 tablespoons vegetable oil
- 1 teaspoon black pepper
Method

Rinse the rice under cold water until the water runs clear. This removes excess starch.

In a large pot, bring the water and salt to a boil. Add the rinsed rice and reduce the heat to low. Cover and cook for about 20 minutes until the rice is tender and water is absorbed.

In a separate pan, heat the vegetable oil over medium heat. Add the chopped vegetables and sauté for 5-7 minutes until tender.

Once the rice is cooked, remove it from heat and fluff it with a fork. Stir in the groundnut butter and coconut milk until well combined.

Add the sautéed vegetables to the rice mixture and gently fold them in. Season with black pepper to taste.
