- 1 cup long-grain rice
- 2 cups chicken broth
- 2 tablespoons butter
- 1 medium onion
- 1 teaspoon salt
- 1/2 teaspoon black pepper

- 1/4 cup fresh parsley
Method

Rinse the rice under cold water until the water runs clear. This removes excess starch.

In a medium saucepan, melt the butter over medium heat. Add the chopped onion and sauté until translucent.

Add the rinsed rice to the saucepan and stir to coat the rice with the butter and onion mixture.

Pour in the chicken broth, add salt, black pepper, and the bay leaf. Bring to a boil.

Once boiling, reduce the heat to low, cover the saucepan, and simmer for about 15-20 minutes or until the rice is tender and the liquid has been absorbed.

Remove the saucepan from heat, discard the bay leaf, and let it sit, covered, for an additional 5 minutes.
