Ingredients

  • 1 cup honey
  • 1 cup brown sugar
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1 cup milk
  • 2 large eggs
  • 1/2 cup chopped walnuts

Method

  1. 1

Preheat your oven to 175°C (350°F) and grease a 9x13 inch baking pan.

  2. 2

In a large mixing bowl, combine honey and brown sugar, mixing until well combined.

  3. 3

Add the eggs and milk to the mixture and whisk until smooth.

  4. 4

In a separate bowl, mix together the flour, baking powder, baking soda, ginger, and cinnamon.

  5. 5

Gradually add the dry ingredients to the wet mixture, stirring until just combined. If using, fold in the chopped walnuts.

  6. 6

Pour the batter into the prepared baking pan and smooth the top.

  7. 7

Bake in the preheated oven for 40-50 minutes, or until a toothpick inserted in the center comes out clean.

  8. 8

Allow the piernik to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
